La Vastedda of the Valle del Belice D.O.P. it is a historical Sicilian cheese produced in the homonymous valley, which has recently obtained the recognition of Denomination of Protected Origin (D.O.P.). It is a unique fresh cheese: in fact it is the only sheep's milk product using ancient spinning technology.
Ingredients: whole sheep milk, lamb rennet, sea salt of Trapani saltern Production technology: whole sheep milk is coagulated in a wooden vat at 38-39 ° C with lamb's rennent paste for about 45-50 minutes. Among all the Sicilian dairy products, pecorino has the oldest traditions. The first historical references date back to the 9th century B.C., in one of the iconic passages from the Odyssey, when Ulysses met Polyphemus.
